This copper and brass bombe ice cream mould stands 120 mm (4.75 inches) with a diameter of 108 mm (4.25 inches). The sides would have been lined with ice cream, the centre filled with a sauce, or fruit, with more ice cream added to the top and returned to the ice. To extract the ice cream bombe, the mould was inverted and the brass foot unscrewed, which allowed air into the mould to make it easier to lift the mould off. When the ice cream bombe was cut open the filling then "burst" out. It would date from around 1880.
